30 Day Challenge: Day 21

30 Day Challenge: Day 21 -- A recipe

Bacon Broccoli Quiche recipe

Here is the Bacon Broccoli Quiche recipe:

Ingredients:
1 9-inch frozen pie shell
1 10-oz package of frozen broccoli (I used fresh though)
1/4 an onion (chopped)
1/2 jalapeño (diced, seeded)
1/2 package of bacon (cooked and chopped)
1 cup milk
3 eggs, beaten
2 tablespoons melted butter
1 tablespoon flour
1 teaspoon black pepper
1/2 cup shredded pepper jack cheese
1/2 cup shredded sharp cheddar cheese

Preheat oven to 375. Bake pie crust about 10 minutes to get started. Let cool. Cook broccoli onion, and jalapeño until tender, drain well. (I just put them all together in the microwave for about 4 minutes.) Meanwhile, combine milk, eggs, butter, flour, salt, pepper. Whisk until well blended. Then layer bacon on bottom of crust. Then broccoli, then cheese. Then pour liquid mixture over everything. Bake at 375 for about 35 minutes or until knife inserted in center comes out clean.

Claire's Favorite Foods

Gulp. So I have about 30ish days or so to go. I keep saying I'll be early, but with my luck, I'll be late and have to get induced again. Or with my luck, have him tomorrow and be oh so not ready. Like I said, I've had SO SO SO many Braxton-Hicks, it ridiculous. Today I made sausage and pancakes for supper and that little time moving quickly around the kitchen felt like labor. INSANE. So I decided I better make a list of Claire's favorite foods for whomever is taking care of her for however long I'm imprisoned...aka till I can get an early release from the hospital. So here's what I feed my kid. :) Don't judge or I'll call you on that time you took yours to Crapplebees or McDs. ;)

Claire’s Favorite Foods
Apples - ask if she wants it peeled, or sliced. She can just eat them whole, too.
Oranges - peel and section, duh
Clementines - watch to remove any seeds!
Bananas - peel and remove any strings before giving it to her
Grapes- no seeds! If they are giant ones, cut in half
Mozzarella string cheese
Slice of American cheese
YoBaby Mixed Berry Yogurt - STIR REALLY WELL! Not premixed
Honey Graham crackers
Cheddar Bunnies or Goldfish crackers
Pretzels any kind or goldfish pretzels
Peanut butter sandwich, cut in 2 triangles diagonal (NO JELLY!)
Spaghetti - You have to mix the sauce on the noodles/cut noodles before giving it to her or she will not eat it, she will cry and beg for just the plain noodles. I usually use the Ragu traditional and add 1 lb of burger that I fry.
Tater Tot Casserole
Hot Dish with tomato soup, burger, noodles
Tuna Casserole- Has to be hot! I use miracle whip and about 2-3 cups of noodles, 1 can peas, 1 can tuna. She’ll just ask you to microwave it if it’s not hot enough or if it cools off too much while she’s eating it
Chicken soup – any kind with small noodles or curly ones so I don’t have to cut them. There is a red spoon that doubles as a straw in the drawer.
Grilled Cheese – cut in 2 triangles. I use 2 slices of American and grill it with butter
Mac and Cheese – Kraft blue box, but usually any kind will do
Lasagna
Hot dogs- gross I know.
Hamburger - plain patty. I will fry them and sometimes she’ll want ketchup and bun, sometimes not, just ask. Or you can give her ketchup to dip it in
Corn – any kind
Green beans- calls them “Shrek beans” since they are green
Little trees- broccoli, cut into manageable sized pieces
“Chicken suckers” which are drumsticks
Pancakes or French toast cut in bite size pieces with pure maple syrup or agave nectar
bacon
boiled eggs (chopped up) - have to be hot if they've been in the fridge
Gerber Strawberry Yogurt melts - yellow bag in toddler/baby food area
Cheerios
Flax Seed Cereal (green box)
Captain crunch (yuck, but Josh’s fav too) Probably would like some other cereals, but I never buy them. Does not like raisins/dried cranberries/other dried fruit. I think it's a texture thing. She will chew on them and spit them out.
Quaker Oat Granola Bars with choc chips
Banana bread, esp if you let her help u make it, but no toppings, and likes it heated up if it’s been in the fridge
Won’t eat fruit snacks usually, but likes to squish them. ;)
Loves GUM
Loves ICE … her most requested “food” item.
Loves any kind of crap like cookies, candy, pudding, ice cream, Popsicles, fudge bars, potato chips. Limit for obvious reasons. 2 oreos at 4pm= not eating dinner
Has started eating some kinds of fries, but mostly I think for the ketchup ;)
Will eat most any kind of “sloppity globbity stew” from the crock pot. Loves carrots from the crock pot and you don’t have to cut them too small.
Loves honey roasted peanuts, but watch close…choking hazard! Have not tried any other nuts with her yet.
Love applesauce, look for no sugar or just boil up a pot of apples that need to go with some water and maybe a tiny bit of sugar and make some
Will usually be more willing to try something new if you let her help you make it
Will eat almost anything with noodles or pasta of some type. More willing to try foods separate vs. mixed. Aka... if you make chili, leave out some plain burger meat and she'll eat a bowl of that vs. the mixed up batch.
Likes white rice (won’t always eat baked potatoes, can’t get her to try mashed. Sigh)
Likes peanut butter on crackers
Loves cheese pizza and breadsticks (Good American!)
Will do better eating something if you have the plate completely served/cut up and then put it in front of her. If you dish 1 item, then try to dish another, it’s like you’re messing with what she has and she gets mad. She also won’t want you to cut it in front of her. Cut on the counter when you dish it! She’ll want to have a little toddler knife and try to cut it herself. Do not tell her to try it. Just talk about how yummy and good your own food is! Show how "big" of a bite you can take.

Eating pattern: breakfast around 9. Lunch about 11:30. Maybe a small snack around 4 when I start dinner. Eat dinner at 5:30. Bedtime snack around 8-8:30. I usually don’t actually do a morning snack or afternoon one since she nurses all the time, but I always have a sippy cup of water out for her or an open cup that’s plastic. If we’re out and about she will probably eat a snack, but if we’re home, we’re usually lazy.
But if she doesn’t nurse, she’ll probably need some more snacks!!! Bedtime snack is usually about the same as what she’d eat at breakfast, like a bowl of cheerios and milk or an egg.
And after looking at this…maybe she is drinking too much and that’s why she doesn’t eat snacks? Who knows. They say toddlers regulate themselves…I’m not sure that’s true. It’d be gum and ice cream for every meal!

DRINKS-
100 percent apple or dark purple grape juice. I think she’ll drink OJ, but I don’t normally buy it
Milk-white or chocolate
Gatorade- traditional orange or the light blue flavor (watch out for the diet crap!)
· I have been trying to give her a variety. As much water as she wants of course, but I try to limit to 2 cups juice, 2 cups milk, 2 cups Gatorade per day. Fill them all the way up. She will drink it all! She hasn’t been drinking quite that much lately, but if her nursing is cut back, she probably will.

Yup. She's a picky eater. Is that born or made? Nature or nuture? Hmm...but I sure wouldn't want someone to force me to eat something I didn't like.

Feeding Mr. Bear

Man. If looks could kill. Click on this one to make it full size. I think she was mad about her chocolate milk being all gone. I do want to say that Claire loves her share of sweet junky and carby foods, too. One of her favorites is Spaghettios. Yes. She calls them Gobi-Os or Gobi Circles. She can't say spaghetti. If I have her repeat it, she will say spa-gobi.
This is what happens if I ask her to say "Cheese." She gets this huge goofy grin on her face and squints her eyes shut.

Notice what she is doing? She is feeding her bear bowl. The bowl is shaped like a bear, with the belly being the bowl part. I've since only been feeding her semi-solid food like her thicker oatmeal in this bowl, or it drips all over the table. She loves this bowl! Holly got it for her, and I do believe that Holly only paid about .75 cents for it!

Thanksgiving Food!

So we had my parents down on this past Saturday to have Thanksgiving with them. I made a ham vs. a turkey and there were definitely not enough people to make both. I also made green bean casserole for the first time ever. Wow...that was an easy recipe! But again...I don't really like stuff in cream-based sauces because they are too rich so it's not something I'll make regularly.

Then I made a family favorite called "cheesy potatoes" per Josh's request. I don't like them either because they have sour cream in them. Ha. I am picky. :) So I made those for the first time as well, and they turned out well too.

I made cranberry sauce from scratch per the back of the Ocean Spray bag, and that turned out great. I love cranberry sauce. I could eat that stuff plain like a bowl of ice cream. I love stuff like that that is bitter. Crazy, I know. The canned cranberry sauce has HFCS in it, too, boo.

Lets see...I also made the yeast rolls that you let rise for like 5 hours. I had Claire help me put the frozen dough balls in the pan. I put 2 in each so they were doubly big. Yum. Claire decided to lick one of the dough balls. She loved it immediately and gnawed on it until it turned into a soft lump of gooey dough, at which point she started eating the raw dough. Another favorite of mine. ;)

She also ate raw carrots and celery for the first time! She did chew them up and spit them back out for the most part, but I guess that's all part of trying new things!

I made a 10 pound ham. I swear there are at least still 5 lbs in the fridge. I should probably put it in the freezer tomorrow because I'm already sick of ham. I'm going to make some split pea soup with it. I love split pea soup. It's probably my favorite kind.

I also made 2 desserts. Lemon pudding bars and Apple-Raspberry Cobbler. Both are completely gone. :)

Lets see...Stuffing was done by Stovetop, complete with the MSG in all it's glory. I'm sure that's why all the other brands suck...they don't have MSG.

My brother Richie sent down some corn chowder from his garden corn from this summer. It was super tasty with carrot chunks and potatoes. Claire loved it, but she loves cooked carrots more than me. Carrots are sooo sweet.

Speaking of sweet, Claire's appetite has really picked up lately, and boy does she love fruit. I can't keep bananas, grapes, oranges, or clementines in the house. I think we've already been through 2 boxes of the clementines this citrus season. I'm not used to having another fruit eater in the house! She also loves apples and can easily eat 2 in a day.

She also loves cream of wheat, oatmeal, and hard-boiled eggs. I've been trying to feed her an egg for a bed-time snack instead of something like an apple since the protein will keep her full longer.

I also had a shrimp ring for an appetizer with cocktail sauce. I love horseradish cocktail sauce...the hotter the better...I love the sauce they have at St. Elmo's!

Well that's about it for the food. Want some leftovers?

Black Friday Buys

Last year I bought nothing on Black Friday. Today, I did go to two stores! I got some steals:

Frog Princess Tiana $14.99 vs. $7.44
Snow White $19.50 vs. $7.44
Cinderella $21.35 vs. $7.44
Belle $16.50 vs. $7.44
Ariel $23.95 vs. $7.44

So I got FIVE dolls for $37.20! If I bought them all at "full price" it would have been $96.29.

I also got her some playdough for her stocking....ooooh Christmas is fun!!! I need to control myself. She isn't even begging for anything at this point.

I stopped at 5! They are basically Barbies and super cute. Claire's in love with Princesses! Sorry the sale is over. They also had a Barbie on Special for $5 but I didn't see any left. Bummer. Next time I need to go in the middle of the night apparently.

Among other things, I got my table set for our Thanksgiving which will be tomorrow. I also made homemade cranberry sauce according to the recipe on the back of the Ocean Spray bag. I sampled some, and it is really good! I also made some Lemon Pudding Bars for dessert. Pumpkin Pie is ok, but I'm not super crazy about it. It's generally too rich/thick for me no matter what recipe. I excited about cooking the rest of the stuff tomorrow for our big meal!

Our Vacation Rental

Well, I finally posted all of my San Francisco pictures on Facebook in 2 albums. Check them out and leave lots and lots of comments if you haven't already. It's easier for me to upload massive amounts of pictures at once on there. Blogger only lets you do 5 at a time... has anyone found an easier way? Anyways, we had a super time visiting Aaron. We were gone for 5 days, so it was almost a week, but it was long enough to feel like we got to get away, but not so super long that it wasn't fun anymore.

We once stayed in Vegas for 10 days. That is way to frigging long for Vegas. First time stays, I would advise a max of 5 days in that city. WAY TOO LOUD, NOISY, AND SMOKEY! Really, a 3 or 4 day weekend is plenty to just do Vegas. Really all the Casinos and Buffets are the same, with slightly different themes. All the shops are overpriced and who wants to sit through more than one or two shows in one weekend...

Anyways, we had a car take us to and from the airport with our luggage since Aaron has a compact. He also has a compact apartment, so we stayed at a vacation rental vs. a hotel. It was a really good place to stay. Check out photos of our place here http://www.homeaway.com/vacation-rental/p191003 I wrote the 2nd review...read it for more details. On second thought, maybe I shouldn't advertise that place in case we want to go back. I don't want the dates to be all booked up!

We ate at some really good restaurants. We ate breakfast at our condo, and ate out the rest of the time. We had Thai, Asian Fusion, some Shrimp Place, Indian, some local pizza place, and an "Organic Kitchen" where I had the best Split Pea Soup ever...even better than I make it! We also went to a frozen yogurt place called Yogurt Park, which Claire loved. We probably won't be flying anywhere for awhile with the new baby on the way...and I plan on laying low for a least 3 months after he/she is born!

Tea Parties and Play food

Claire got a tea set for her birthday, which she is madly in love with. She enjoys pouring tea for anyone who will pretend to drink it. She likes to put food in her play microwave that is part of her kitchen and heat up food for us. :) Yay for leftover play food! Ha! I asked her if I could have more tea today, and she said "Of course, Mommy!" I started cracking up.

She likes to plate play food and then serve it to me. I have to wait for the ok though. I started to "eat" something too soon, and she screamed, "NO! It not hot Mommy! I heat it up! It take 3 minute!" She held up three fingers as she put it in the play microwave and pressed the play buttons.

She also likes to sit her baby in the highchair and give it food to eat. She crams the food in their mouth telling it to "EAT BABY!"

She also says "Go ahead" to me sometimes on the stairs when she doesn't want me to hold her hand.

Another fluke...I think she may be starting to "read." We have a plain green bib that says "POOH" on it. I haven't put it on her for months and don't ever remember telling her that it says Pooh. There are no Pooh pictures or other characters. It just says Pooh. Well, I put it on her for breakfast since we were at the bottom of the bib pile(...I need to do laundry!) She looks down, points at the letters, and says "POOH!" It sort of creeped me out. But we have several Pooh books...but I think she actually recognized the word from her Potty seat, which says "POOH," and I do remember pointing out the letters to her and saying Pooh. So is that reading or just matching a word? (Or is that all reading is?) I also have her pick out her name tag at the library when we go for story time.

Good Ole Grub!

We recently meet Daddy for lunch while Matt and Brooke while visiting. We went to YATS on MASS AVE!
This is their funky ceiling:

They don't have menus, just a chalkboard with today's offerings.

Their food is pretty spicy, so we just got Claire plain white rice with butter, which she of course, loved!

Here are Matt and Josh ready to dig into the good old sloppity-gloppity grub!

Their food may look like vomit, but it's always really thick and hearty stews and chilis...and VERY CHEAP! You get a HUGE plate of food for like 5 bucks. They also have all the funky Cajun stuff like gumbo, jambalaya, crawfish, and shrimp.

Orange Lover in Apple Overalls!

Claire is a huge fan of bananas and oranges! Her other current favorites are Cheerios and YoBaby strawberry or raspberry yogurt. Yum. Food.

If I cut them small enough she can eat them pretty well. If there is too much white skin stuff, she just gnaws on them, and spits them out.

This is the basket she used in Holly's wedding. I actually don't let her play with it, except when she's sitting on the counter eating food...oh wait..that's a bad example...I actually decided to hide it so it stays nice.

Aww. Such a cutie! :)

This is why I have to cook only on the back 2 burners and put chairs in front of the oven. She likes to climb on the drawer handle and stand up to see what's on the stove. EEP!

Want some Worms for Dinner

Ew, ew, ew. http://www.babble.com/CS/blogs/strollerderby/archive/2009/04/23/hot-dogs-with-spaghetti-inside-what-s-not-for-dinner.aspx Yuck. I hate hotdogs to begin with. NASTY.

Food Show

Here's a photo from our food show on Sat. I'm holding Claire in the pink dress. She showed us how to make 4 meals in 4 minutes. Awesome! I've become addicted to these meals since first trying them through Moms Club in Jan. You throw your meat, spices, and other ingredients in a ziploc bag and "smoosh" it together. Then you can label and freeze a bunch of meals until you're ready to use them. HANDY! Of course everything you buy comes with recipes as well. I like these kinds of shows because it's a good excuse to get together. Claire also had fun playing with kids from LLL, Hancock group, Moms Club, and church!

What girl doesn't love CHOCOLATE?

Claire loves ice cream and chocolate. Well, who doesn't? YUMMY!

"Maybe if I look at this the right way, some more will magically appear!"

Claire's First Piece of Gum

She actually did not eat this gum. She pulled it out and gave it back to me. YUMMY!

Visiting Great-Grandpa

Claire and I visited her Great-Grandpa at Timbercrest for lunch on Friday on our way to Valpo. She ate well here, too! She dined on applesauce, cottage cheese, ice cream, and pudding.
All of the other little old ladies loved seeing Claire, as well.

She enjoyed scribbling on the menu and placemats. You can order what you want to eat off the the menus, and then they bring it out.

She has changed loveys from her pink carebear to this baby doll. I kind of miss the carebear. It was smaller and easier to wash!

Sweet Treat

Claire loves candy. What baby doesn't? I'm trying to give her lots of snacks as last Monday the Nutritionist from First Steps came to weigh her and she was 23.11, which is down a few ounces. It's funny though because she's been eating and sleeping A LOT.

I think she's having a growth spurt!

Sugary Peanut Butter Cookies

Sugary Peanut Butter Cookies

• ½ cup peanut butter
• ½ cup butter
• ½ cup sugar
• ½ packed brown sugar
• 1 egg
• 1 ¼ cup flour
• ¾ tsp. baking soda
• ½ tsp. baking powder
• ¼ tsp. salt
• “Sweet Cinnamon Sprinkle” topping by Pampered Chef

First combine peanut butter, butter, sugar, brown sugar, and egg. Blend until smooth. Then combine flour, soda, powder, salt, and mix well all together. Chill dough 8 hours or overnight for best results.

Use a cookie scoop for uniform baking. Scoop onto tray, then press a large fork both directions to make an “X” design with the prongs of the fork. Top with Pampered Chef “Sweet Cinnamon Sprinkle” topping before baking. Put dough back in fridge between baking batches to keep stiff.
Bake on parchment paper. Bake in a preheated 350 degree oven for 7-8 minutes. They will continue to bake while cooling on the hot tray! Allow to cool/form on hot tray for 1-2 minutes, then slide off paper and allow to set about 5-10 minutes before removing from paper.

Bacon Broccoli Quiche recipe

I made 2 awesome Quiches last night...one for dinner and one to take with to Mom's Club Breakfast Club today.

Here is the Bacon Broccoli Quiche recipe:

Ingredients:
1 9-inch frozen pie shell
1 10-oz package of frozen broccoli (I used fresh though)
1/4 an onion (chopped)
1/2 jalapeño (diced, seeded)
1/2 package of bacon (cooked and chopped)
1 cup milk
3 eggs, beaten
2 tablespoons melted butter
1 tablespoon flour
1 teaspoon black pepper
1/2 cup shredded pepper jack cheese
1/2 cup shredded sharp cheddar cheese

Preheat oven to 375. Bake pie crust about 10 minutes to get started. Let cool. Cook broccoli onion, and jalapeño until tender, drain well. (I just put them all together in the microwave for about 4 minutes.) Meanwhile, combine milk, eggs, butter, flour, salt, pepper. Whisk until well blended. Then layer bacon on bottom of crust. Then broccoli, then cheese. Then pour liquid mixture over everything. Bake at 375 for about 35 minutes or until knife inserted in center comes out clean. (Put tinfoil on crust edges to prevent over-browning of crust--which I forgot this time..)

What I already knew!

Well, Claire qualified for the First Steps program. She doesn't pull the food off the spoon with her lips like she should. She doesn't chew/munch food yet. She can bite food like a cracker, but won't mash it around in her mouth yet. She lets it sit in there until it is wet enough to swallow, then finally eats it. She also will put a lot of food in her mouth like Cheerios, but then will push them back out with her tongue vs. swallowing them. So our next meeting with them is in a couple weeks. She also will not move the food around with her tongue like she should be doing at this age. The 2 evaluators did not think she would qualify because her speech and social skills are so advanced. They basically played for awhile. They brought a shape sorter, a puzzle, blocks for stacking, etc. She just barely qualified. So any therapy we do is up to us. We can quit any time we want, but if there is some sort of program out there to help her eat better...why the heck not take advantage of it!!! I am going to continue to offer her stuff 3-4 times a day, but I'm really looking forward to some advice/tips from them. They again said, she'll probably grow out of it, some kids just start eating at different rates, but I'm ready for her to start eating a little more regularly than she does!

The JOYS of a Messy Baby

I thought I would entertain you, dear blog readers:

Claire is getting good at eating with a spoon when she is interested in eating!

Claire loves ice cream! Seriously, though...who doesn't...I have yet to meet anyone who doesn't...
